this is what happened to me in creating this piece
i couldn't stop
803 photos later.......
i mean they are just ice cubes right? 
no.
they are not
just ice cubes.

they are pure essence of beauty
they are the earth
they are life
they are vulnerability
they are intimacy
they are fancy pants
they are everything
all in one moment
all in one moment of 
just making ice cubes

do you (& me) a favor
pick up some edible flowers
these are lavender, cornflower & violas
(from silverlake farms at the hollywood market)
you can pick them up at whole foods or a neighbors garden
super fun for the kids to get involved too
the only thing you will need is a strainer
to pour the water into glasses from the carafe 
unless you don't mind a cornflower lub ;)

you can also do this with basil and lemon
or any herb/citrus combo you want to try

it's worth the fun
trust me
beauty is the only way

zucchini linguine//macadamia nut pesto.







*beauties*
this one is pretty much everything you see
(beauty incarnate)
3 minute steamed zucchini ribbons
3 minute cuisine art pesto love fest
so many ideas you can add if you desire
fits in the summer wardrobe perfectly 
AND... 
it's totally plant based
so you can hear your cells singing
hallelujah!

zucchini fettuccine//macadamia nut pesto//paleo pasta*
*gather*
4 yellow/green zucchini
pesto gathering: 
1/2 cup macadamia nuts
1 bunch cilantro or parsley or both
1 clove garlic
some squeezes of meyer lemon
1/2 cup olive oil
sea salt

*rock it*
PESTO
(look at pic)
put everything in the cuisinart
pulse it to taste
you may need to add lemon or salt
it's also good sitting with all the ingredients 
for a bit too.. it gets better as it sits.
ZUCCHINI
create ribbons with a basic peeler
steam the ribbons for 3 minutes
they tend to collect moisture 
so i like to place them in a colander
with a plate/towel underneath the colander
to drain the liquid a bit
but it's not necessary!
then....
mix all together in a big bowl
and serve while warm or
you can wait if you need to

*ideas*
amazing as a full meal
or as a side with 
shrimp or wild salmon
this is also a great dish
to bring to a potluck
break it down

sweet potato & zucchini quichkes (paleo pancakes).








*BEAUTIES*

so this one is not the blend it all together & make a meal
as it does take a little more time shredding with the cuisinart
or by hand, mixing everything together & then flipping them
on the fire...it was SO worth it because my kids devoured them!!

this recipe is inspired by the book practical paleo
these were used as a hamburger buns but it also
brought me back to making latkes where you can add 
all the veggies you want! it's slightly more eggy 
which makes it almost like a quichke cake ;)

sweet potato zucchini quichkes

*gather*
3 eggs
2 tsp coconut flour
(i used more here)
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp salt
2 cups shredded
sweet potato & zucchini*
coconut oil for frying
*work it*
shred veggies (keep peels on)
grab a big mixing bowl
beat eggs and add all spices and flours in 
then add your shredded veggies
mix everything together
(i was not extreme with the measurements!)
just added things as with my fingers
easy to mix this with a fork or your hand
*fire it up*
grab a iron clad or good thick pan
put it on medium high
get a plate with napkins on it
or a paper bag to put on side
for when the quichkes are ready
add some coconut oil 
grab a small handful of batter
place on the hot pan
flatten with spatula and wait till 
the bottom is browning then flip 
over and do the same on that side
you will find your way in this pancake
process & then place them on the plate

*you can also use regular potatoes & 
other seasonal veggies for this recipe!
you can also use any kind of flour you have on hand*

avocado cucumber soup.

i am so excited to share this 
green love fest with you!
why? because....
1. we are building your summer soup 
archive of EASY beauty (blender) soups
2. it's a perfect julesy recipe: 
throw it ALL in - blend - eat!
3. it's so DELICIOUS!
4. oh and everyone can eat it
(you don't need teeth ;)
it's a win*win*win with LOVE.

chilled avocado cucumber soup*
*gather*
2 english cucumbers//peeled//seeded//chopped
2 haas avocados//scooped out or chopped
3 limes//zest & juice
1 teaspoon of salt

*mix it up*
put all of the above in the blender
turn it on & up
it's thick like a pudding
or mousse and so so good
for a moment i thought maybe
i should add water b/c of the thickness
but i grew (in about 1 second) to LOVE it

i feel like this would be a beautiful addition to 
salmon, shrimp or scallops maybe with
some mango & an entire island vacation!
*this soup/mousse/pudding is ALL about the
sourcing of the food! find the tastiest, freshest,
grown with love produce so that your soup
tastes amazingxxxx

**BEAUTIES**
there is a particular time in the beginning of a season 
where i ground into the realization that the time
(for that new season) has arrived
as though the page has turned to the next palette 
of tastes, textures, colors & creations 
that i so graciously get to know again & again
another chance to explore, discover & enjoy all that it brings
like seeing a dear friend from a long time ago
we catch up with the new, we recall the past
we make another memory
i felt this feeling when i was gathering the ingredients
to cut up and throw in the blender
like a de ja vu but new :)
this is a basic in my kitchen during the summer
as a light meal, a side or a snack to grab on the go
assuring us that there is always some beauty in the fridge

whether we have come to know it as spring or summer, winter or fall
the change of the seasons is a continuation of our story,
our kitchen culture, it's how we pray in this way
in the celebration of the juiciest strawberry
all over our childrens' cheeks
or the watermelon, peach, apricot that has made
it's way to perfection & all i can hear are the kids calling out
"more! more! more!"

how can we stay away from a church like this? 
how can we not hunger for this kind of beauty? 
how can we learn to feed each other in this way?

gorgeous gazpacho

*gather*
2 - 2 1/2 lbs of the best tomatoes you 
can get your hands on
cut in half or big chunks
(beefsteak/japanese)
***everything about this is the tomatoes***
1/2 peeled english cucumber
(i've used persian too)
2 tbs.red wine vinegar
2 tbs. olive oil
1 clove of garlic (peel & cut up)
3/4 cups of water

*rock it*
this is basically a tomato smoothie!
put everything in the blender together
blend till all the tomato peelings are gone
just a few minutes to a frothy, cooling love fest 
enjoy immediately or put in the fridge for later
(only gets better with time)
i love this gazpacho in a big glass ball jar
i love to pour it in teacups for me and b
it tends to separate
shake it up and enjoy!

squeaky clean spinach sauté.







*beauties*
can you believe the beauty of this bloomsdale spinach!?!?
it's so incredibly fresh, crisp & filled with a symphony of flavor.
it's worth your trip to the market (as is everything ;) 
i am having an appreciation party for this deep green
& weiser farms for making it happen.
the other major piece of this party is my kids are loving it too ;)
yep - i said it...maybe it was my yummmm moan
while cooking that got their attention
i get so excited i can't help myself
& the next thing i know O. is reaching his hand in the pan
for a try of this GREEN goodness!
also - this is a super seasonal situation
which also inspires a deep appreciation
like a dear friend visiting for a short time..
there is a connection & intimacy with our food in this way.. 

i am not sure what made me reach for the coconut oil but that started 
this love fest.. i have been on a kick to peel the carrots into ribbons..
so that happened. then i had the sesame seeds out
and i knew this spinach was going to be in the mix 
(i used kale too that first time)
this recipe just showed up as a gift in my pan!
it's exactly what the doctor ordered as
i have been hungry for SIMPLE love filled nourishment
and this sings that song with a flavor that is
deep, delicious & soft. 

spinach saute
(or any deep greens!)

*gather*
bloomsdale spinach (weiser farms)
OR kale, mustard greens, chard (FRESH)
*to prep spinach: take stems off if want to*
2 - 3 carrots (peeled into ribbons)
black sesame seeds
(small pour) toasted sesame oil
(small chunk) coconut oil
salt & love 

*fire it up*
choose a pan that you have lots of room in 
(more than you might need, you need the freedom!)
you can place heat on medium 
put in coco and sesame oil
add carrots first to get the sweetening happening
saute for a few minutes
then add spinach for a few more minutes
then sesame seeds, salt, love
mix around and serve warm 
this also hold ups well in the pan
throughout the day
or save some for later
